Easy Orange Baked Chicken Recipe (Turkey Too)

Orange Baked ChickenThis is a very Easy Orange Baked Chicken Recipe that I use frequently.  The recipe is easily adaptable and I have used the same marinade for Chicken and whole Turkeys for Thanksgiving, Passover, Rosh HaShanah and everyday.  I have even used the marinade for Salmon.  I thought that I would post it now, just in case you haven’t decided how to cook your Thanksgiving Chicken or Turkey.

Ingredients
1 cut up Chicken (or whole)
1/2 can Frozen Orange Concentrate
1 Chicken Bullion Cube
1 T Brown Sugar
1t Curry (or more to taste)
Sprinkle of Cayenne Pepper to taste
1/2 Onion, chopped (optional)
1-2 Hand Fulls Raisins (optional)
Marinade Mix For Chicken
Directions
Mix Orange Juice, Bullion Cube, Brown Sugar and Spices together.  Pour this over chicken which has been placed in bake dish.  Coat thoroughly.  Add chopped Onions And Raisins, if desired.  Cover with aluminum foil and pierce foil several times.
Chicken Coated With Orange Marinade
Bake on 350 degrees for 1- 1 1/2 hours.  Remove foil for last 15 minutes.  Test chicken for doneness.  Enjoy.

This is one of my favorite recipes for Chicken that I have adapted for both Turkey and Salmon.  I hope that you will enjoy it.  It’s not too late to try this with your Thanksgiving Turkey.  Of course, you would need to scale the recipe up for a turkey.

  1. Yael, you come up with some great recipes–this one looks delicious! It’s just me and my hubby this year. I’m doing a main dish and then just a favorite side or two, and that will be plenty for us. I don’t want to gain weight over the holiday, so I’ll try to eat small and enjoy my favorites. I hope you and your family have a wonderful Thanksgiving! I have been enjoying our mild fall weather, but wow, we had a ton of rain the last few days. I still have some plants to pot up and bring in, and tender bulbs to dig–some of them in protected spots still haven’t died back! I’m going to try wintering over fuschias this year–we’ll see what happens.

      A Happy Thanksgiving to you! Hope you have a lovely one for just you two. We aren’t doing the main cooking as we are headed your direction to Vancouver for probable over stuffing ourselves among friends. I’m not without baking duties, however, as I baked two sets of rolls yesterday and am making a pumpkin dessert today.
