I was wondering what can I do with my potatoes in grow bags now that I have started to get a potato harvest. Well, it’s almost the 4th of July, so I searched for a good garden recipe for that All American dish, potato salad. So here I found a potato salad recipe for a not entirely American, Mediterranean Potato Salad. I thought that would be a nice twist. This one sounds yummy.
Mediterranean Potato Salad
2 lb Potatoes (red, Yukon Gold, fingerling), scrubbed and cooked with skin till tender. Cut into 1 inch pieces
1 Cucumber sliced
1/4 C Chopped Onion
1/4 C Sundried Tomatoes
2-4 Oz Feta Cheese – crumbled
1/3 C Extra Virgin Olive Oil
3 T Balsamic Vinegar or Lemon Juice (about 1 lemon)
2 T Capers
Basil and Parsley chopped
Salt and Pepper
Dash Cayenne Pepper
Combine olive oil and whisk together with lemon juice or balsamic vinegar. Add spices an herbs to this mixture and continue whisking.
Combine potatoes, sun dried tomatoes, cucumber, capers and feta cheese. Pour olive oil mixture over ingredients and mix together. (Optionally, you can try a little bit of chopped mint instead of or in addition to the basil.) Chill and enjoy.
There you have it, a nice potato salad variation on an American favorite for this 4th of July, and a perfect start to consuming the potato harvest from your home garden.
